About Tobermory 21 Year Cask Strength Manzanilla Finish Scotch Whisky
Tobermory uses optic barley sourced from several Scottish malt makers, meticulously selected by their own master distiller. The barley is soaked in fresh water for two to three days and then spread out on the distillery floor to germinate for one to three weeks (depending on the season). The barley is constantly monitored, turned, and tended, and as it germinates, it is infused with the distinct sea mists of Mull. The barley is then milled in a traditional Porteus mill to the Master Distiller's exact specifications. They distill their whisky using the same techniques they used over two hundred years ago, using two wash stills and two low wines stills.This 21-year-old Tobermory is a well-aged single malt that was finished in Manzanilla sherry casks. Manzanilla is a paler, drier sherry with a salty flavor, meaning that the influence of the cask is different than that of your typical rich sherry. The whisky gets additional citrus and spice notes from the Manzanilla casks. Bottled without any coloring or chill-filtration at 107.6 proof, the expression is limited to around 5,500 bottles.

About Johnnie Walker
Johnnie Walker, one of the most widely distributed brands of blended Scotch whisky in the world, originated in the Scottish burgh of Kilmarnock in East Ayrshire. The story of the brand starts with John Walker, who started a profitable groceries business with the inheritance from his father. John Walker, himself a teetotaler, found his competitive edge in whiskies he blended himself, offering his customers a consistent product, unlike most other grocers, who usually sold a line of single malts that were never all that consistent. Whisky represented about eight percent of the sales when John’s son Alexander Walker took over the business after his father’s death in 1857, and when the company was passed on to the third generation, this share was already between 90 and 95 percent. The legalization of the blending of grain and malt whiskies by the Spirits Act of 1860 marked the beginning of the modern blended Scotch whisky. Johnnie Walker's first commercial blend, called Old Highland Whisky, was launched in 1867. Alexander Walker also introduced the brand's signature square bottle, and the distinctive slanted label. In 1893, the Walkers acquired the Cardhu distillery, and kept expanding through the early 20th century by buying interests in a number of distilleries. This ensured the company a steady supply of whiskies for its blends. By 1909, John's grandsons George and Alexander II had expanded the line, and sold three blended whiskies.In 1909, the company rebrand ed its whiskies, introducing the famous striding man logo and renaming the blends after the colors of their labels. By 1920, Johnnie Walker could be bought in 120 countries. The company joined Distillers Company in 1925, and, after its acquisition by Guinness, and Guinness’s subsequent merger with Grand Metropolitan, the brand is now owned by Diageo.

About The Singleton 19 Year Old 2021 Special Release Single Malt Scotch Whisky
Glendullan is situated in Dufftown, the Whisky capital of the world. As one of the busiest Whisky epicenters, it is home to some of the greatest Scotch Whiskies ever created. Founded in 1898, by William Williams & Sons from Aberdeen, the distillery was actually decreed by King Edward VII in 1902. Like most distilleries, Glendullan has a history of ownership changes and renovations. In 1926, the distillery was bought out by Distillers Company Limited, then switched hands to Scottish Malt Distillers in 1939. By 1962 the distillery was renovated, and only a decade later a new facility was constructed near the original site. In 1985 the original facility was mothballed.“Glendullan 2” is a real workhorse, putting out 4 million liters of spirit per year, producing several labels. The distillery itself has official bottlings and has been producing the Singleton brand since 2007. A bioplant which processes the spent lees was also opened on-site in 2014. The distillery has 3 wash stills with an impressive capacity of 33,700 liters, and 3 spirit stills with 23,800 liters of capacity. They source their unpeated maltings from Diageo's industrial site, and the mashing takes place in a 12-ton mash tun.
Diageo's 2021 Special Releases Collection follows the theme of hidden stories within iconic distilleries, connected via mythical creatures depicted on the bottles. The Singleton 19 Year Old Special Release Single Malt was aged in refill American oak casks before being finished in cognac casks and bottled at 109.2 proof. Situated in the Speyside region of Scotland, the Dufftown Distillery was founded in 1895 by four wine merchants who, together, purchased a stone built saw and meal mill and converted into a distillery. Located near the confluence of the Rivers Dullan and Fiddich, the distillery draws its water from Jock's Well, which is renowned for its incredibly pure and flavorful spring water (on more than one occasion, nearby distilleries — particularly Mortlach — have been caught attempting to d ivert water from the well to their own distillery).Singleton of Dufftown Single Malt Scotch Whisky is crafted exclusively from malted barley, which is milled and mashed before being fermented in the distillery's wooden washbacks. About Kentucky Owl
Kentucky Owl was founded by Charles Mortimer Dedman, a local pharmacist, in 1879. After marrying his wife, Dedman was given a large parcel of land on the banks of the Kentucky River, as a wedding gift from his adopted father who was a local town judge. C.M. Dedman Distillery was established here on the banks of the Kentucky River, producing "The Wise Man's Bourbon" under Distilled Spirits Plant Designation "No. 16", one of Kentucky’s original distilleries and part of a booming industry.Kentucky Owl achieved much success and production continued until Prohibition halted distillation. The family-run facility was no match for the "forces of teetotalism, temperance and eventually, the Feds". In 1916, Prohibition left several local distilleries with ample reserves of bourbon. As for Kentucky Owl, approximately 250,000 gallons of bourbon were left over in various stages of aging. Today these reserves would be worth about $40 million in inventory. After Federal agents descended on the Dedman’s distillery, the bourbon was seized and shipped up the river by barge to the state capital in Frankfort for "safekeeping" in a warehouse.
Currently, Kentucky Owl is in the midst of designing a stunning state-of-the-art d istillery park with rickhouses for aging, a bottling center, as well as a vintage dinner train to stop on the property. It will be built at Cedar Creek Quarry in Bardstown. The 420-acre site will boast beautiful lakes with crystal clear, limestone-filtered water that will be used in their whiskey production.

Balblair Single Malt Scotch Whisky is made from plump, ripe Scottish barley, which is malted and fermented using water from the same source the Ross Family began using nearly 225 years ago. Following fermentation, the grains are twice distilled through the Balblair's copper-pot stills. After distillation, Balblair's stillmen remove the heads and tails of the distillate and preserve only the "hearts"for maturation (the hearts comprise less than 20% of the entire distillate).Unlike other Scottish distilleries that bottle their whiskies with an age statement, Balblair Distillery bottles its whisky with a vintage statement. This method of bottling, which emphasizes maturity rather than age, allows Balblair's Distillery Manager — John MacDonald — to bottle the whisky when it has reached its peak flavor profile. "There's something quite special about a perfectly matured, Highland single malt whisky," says MacDonald. "About having the essence of a vintage year, captured in a bottle. About tasting it. About feeling it."
Balblair 1975 Single Malt Scotch Whisky was distilled in 1975 and launched in February 2012. The whisky has a rich golden color, along with an aroma of citrus fruit, soft vanilla and toffee. The aroma gives way to notes of fresh fruit, honey, oak and cloves on the palate, and leads to a long, layered finish. Balblair 1975 Single Malt Scotch Whisky earned the Gold Medal at the International Wine and Spirits Competition in 2013.

About Balblair
Balblair, founded in 1790 by John Ross, is one of the oldest distilleries in Scotland. The distillery was operated by the Ross family until the late 19th century, when James Ross gave up the tenancy of Balblair to Alexander Cowan, a wine merchant from Inverness. In 1911, Balblair ceased its distilling operations, and in 1932 the last whisky from the era was bottled. In 1948, Balblair resumed production under the stewardship of Robert James "Bertie" Cumming, a solicitor from Banff, who purchased the distillery for £48,000 a year later. In 1970, he sold the company to Hiram Walker, and throughout the 1980s extensive investments were made in the development of the distillery’s facilities.
