The Macallan Triple Cask Matured 18 Year Old Single Malt Scotch Whisky
About The Macallan Triple Cask Matured 18 Year Old Single Malt Scotch Whisky
The Macallan Triple Cask Matured line is a marriage of single malt whiskies that have been married in American sherry-seasoned casks, European sherry-seasoned butts, and American ex-bourbon barrels. They refer to the three elements as "A Trinity of Spirits" and the line — available in three different agings — has become one of The Macallan’s most popular offerings. The Macallan 18 Year Old Triple Cask Matured sits at the top of the line. An intriguing whisky, it's aged in a triple-cask combination of European and American sherry seasoned oak casks and American ex-bourbon oak casks. The eighteen years of aging not only develops an exquisite flavor profile, it also adds depth to the velvety character and mouthfeel over complex notes of soft vanilla, cocoa, orange citrus, and wood smoke.

About The Macallan
Situated on a ridge above the banks of the River Spey, the Easter Elchies House has been the spiritual home of The Macallan for over three centuries. In 1820, Alexander Reid sowed the fields surrounding the rented home with barley and established the first licensed distillery on the estate, which he named Macallan after an ancient church that had been destroyed by fire during the 15th century. In the slow winter days, Reid would ferment and distill his excess grains into whisky, which was often drunk straight from the still or sold to travelers passing through the town.Today, the Macallan Estate encompasses 370 acres, 95 of which are devoted to the production of the Macallan Estate's Minstrel barley (a single acre produces about 2.5 tons of barley each year, enough to yield 1,800 bottles of The Macallan). In addition, the distillery contracts with farmers to purchase barley that is low in nitrogen and high in starch, resulting in a rich and oily whisky.
After the harvest, the barley is malted and mashed in one of The Macallan's two mash tuns, a process that takes between four and eight hours. Then, the barley is fermented with a specially cultured yeast before being distilled twice through The Macallan's copper-pot stills. The copper comprising the stills acts as a catalyst and enhances the formation of sweet esters while minimizing impurities such as sulfur. In addition, the curiously small s tills — some of "the smallest stills within the Scotch whisky industry," according to production manager Alexander Tweedie — produce a whisky with a heavy, oily flavor. Following distillation, The Macallan distillers remove the heads and tails of the whisky and collect approximately 16% of the spirit to fill into casks for maturation. This "cut," which is among the highest of any Scottish distillery, results in a more full-bodied and richer whisky.

About Heaven's Door
Launched in 2018, Heaven's Door Whiskey is a collaboration between Industry veteran Marc Bushala and Master Blender Ryan Perry who teamed up with music icon Bob Dylan. This expression is the product of a partnership with Redbreast Irish Whiskey, marking the first time that the two brands collaborate. Crafted by Master Blenders Ryan Perry and Redbreast's Billy Leighton, it brings together the worlds of Irish and American whiskey. It's an extension of Bob Dylan's connection to Ireland and the Irish Clancy Brothers who inspired his music.About American Whiskey
There are two main representatives of the American whiskey family, bourbon, and rye, but some other spirits don't fall into those two strictly regulated categories.
There's equally strictly regulated American single malt, made from 100% malted barley, Tennessee whiskey, essentially bourbon filtered through maple charcoal and aged in new charred oak barrels.
And then there's moonshine, a high proof (150- 170 proof) distilled spirit mainly made out of corn which gained popularity during the prohibition.

Midleton Very Rare Dair Ghaelach Knockrath Forest
About Midleton Very Rare Dair Ghaelach Knockrath Forest
Midleton Very Rare is a brand under which the New Midleton Distillery from the East Cork town of Midleton produces its premium Irish whiskeys. The New Midleton Distillery started its operations in 1975, consolidating in one place the production of Irish Distillers Group, which was founded in 1966 through the merger of John Power & Son, John Jameson & Son and the Cork Distilleries Company (which owned the Old Midleton distillery). The distillery is best known for making the famous Jameson Whiskey, but also produces other well-known brands, such as Powers, Paddy and Redbreast. Midleton Very Rare was created in 1984 by Master Distiller Barry Crockett, who guided the New Midleton Distillery on its journey of creating the finest whiskeys in the world for over 30 years. Upon retiring in 2013, he passed the baton to his mentee Brian Nation, who continued to create special and unique whiskey across the Midleton Very Rare portfolio.Midleton Dair Ghaelach is a series of the distillery’s Irish pot still whiskeys matured in traditional bourbon barrels, and finished in Irish oak. Midleton Dair Ghaelach was the first whiskey in over 100 years to be matured in native Irish oak, and Knockrath Forest is the third release in the series. Irish oak barrels were not used before due to the lack of sustainable supply, however following the recent strides in the reforestation of Ireland, the distillers are now able to responsibly procure sustainable native oak for maturation.
Midleton Very Rare Dair Ghaelach Knockrath Forest Tree 2 is made from single pot still Irish whiskeys aged 15 to 28 years, which were matured in traditional Bourbon barrels. What makes it truly unique, are ad ditional 2 years of finishing in virgin Irish oak casks made from trees from the Knockrath Estate. This whiskey is bottled at cask strength of 56.3% ABV.

About Irish Whiskey
Contrary to popular belief that Scots invented whisk(e)y, Irish whiskey was mentioned almost a century before its Scottish brother.
Its origin comes from the perfume distilling monks who decided to tweak the recipe a bit, creating Irish whiskey.
Irish whiskey doesn’t have a lot of rules and regulations to be considered “pure” and can be made with various grains and processes, as long as it is aged for at least three years in wooden casks and has a max ABV of 94.8%.

Bushmills 28 Year Old Single Malt Cognac Cask Whiskey
About Bushmills 28 Year Old Single Malt Cognac Cask Whiskey
The oldest historical records tell us that whiskey originated along the north coast of Ireland. Whiskey has been made there for over 1,000 years, a craft passed down by generations of Irish inhabitants. Sir Thomas Phillips got his license to distill on those lands in 1608, making it the oldest licensed distillery in the world. A lot of whiskey was produced there — even before the governor of Bushmills, Sir Thomas Phillips, was granted the license to distill there in 1608. After all, Hugh Anderson was doing it in 1784, registering the very first trademark on a pot still."Single malt" means that a whiskey has been made at a "single" distillery and uses only "malted" barley in its recipe. Single malt whiskeys are considered the best because of the malted barley. Even centuries ago, malted barley was believed to be the finest grain for making whiskey. Whiskey was only made with barley until the 1800s, when the King of England imposed a tax on it. At that moment, most distilleries switched to corn, a cheaper ingredient, to make their whiskey. Most Irish whiskeys rely only on low-cost corn to make their whiskey to this day. But not Bushmills. Only Bushmills maintained this connection to whiskey’s origin.
A storied distillery steeped in history, Bushmills didn't make it this far by staying the same. Weathering conflict, fire, and famine, Bushmills has emerged from each trial with a newfound strength and commitment to their cause.
Bushmills has always stood its ground in the face of adversary, natural, and economic distaster, rising from the ashes ever stronger.
Today, Bushmills remains an icon of Irish Whiskey. Spearheading Bushmills' new "The Rare Casks" series is the Bushmills 28 Year Old Single Malt Cognac Whiskey, one that takes us on a journey through the illustrious career of Master Blender Helen Mulholland. One of the very first batches she worked on, she has kept a watchful eye over it ever since the spirit was distilled in 1992. Built on their unpeated single malt, this expression was first aged for 11 years in Oloroso sherry casks before being transferred to meticulously-sourced ultra-rare Cognac casks for another 17 years. Complex, rich, deep, and nuanced, this rare Irish whiskey was bottled on July 7th, 2020 at 93.4 proof.

About Bushmills
In the words of Master Distiller Colum Egan, the world’s oldest licensed whiskey is not good because it’s old, but rather it’s the other way around. Granted the royal license to distill in 1608, Bushmills is located in the village of Bushmills on the north coast of Ireland. Embedded in the lives of the locals who work side by side in this legendary distillery, the water is sourced from the River Bush that flows through the village.More than 400 years later, Bushmills is still delighting its loyal fans with new offerings. The distillery weathered everything from a disastrous fire, the Prohibition and devastating grain taxes because of its uncompromising commitment to quality – even when other Irish whiskeys were forever changed due to a tax on barley, this legendary distillery continued distilling single malt whiskey in the traditional way, never substituting barley for corn or other inferior grains. Among its endless accolades, the distillery boasts the only Gold Medal for whiskey ever to be awarded at the Paris 1889 Expo.

About Daftmill
Situated in the Howe of Fife, a valley in Scotland, Daftmill is a family farm that mainly grows cereals and potatoes and rears cattle. It is named after a local stream, called "The Daft Burn", which plays a trick on the eye when viewed from a certain point, making it seem as if the river is running uphill. The farm has been operational for 6 generations but it wasn't until more recently that brothers Ian and Francis Cuthbert ― whisky lovers and perfectionists ― finally opened the doors of the distillery that was long in coming.Their own malted barley was on hand, so was an artesian spring, and an old mill building was converted into a distillery in 2004 and 2005. All the labor and equipment ― apart from their stills from Forsyths in Rothes ― came from local craftsmen. It was on November 30, 2005 that they received their license at last. The first whisky was distilled 2 weeks later. Then came the waiting game, as they expected that their spirits would not reach the market before they have aged for at least a decade. Indeed, they began releasing the whisky in 2018 at 12 years of age.
Using their own farm-grown barley and artesian-well water they craft fine Lowlands whisky with minimal waste where all the magic happens within a 5-mile radius of the farm. Daftmill is a farm first and distillery second, as the latter only operates during midsummer and winter, during the farm's quiet periods ― a practice that used to be the norm in Scotland, but has become ext remely uncommon in the past century. This means that all their spirits come in super-limited quantities.

Four Gate Outer Loop Orbit Batch 2 Bourbon Whiskey
About Four Gate Outer Loop Orbit Batch 2 Bourbon Whiskey
Four Gate Whiskey Company started releasing its small-batch expressions with innovative finishes in 2019, gaining much critical acclaim from the start. Batches 1, 2, 3, 4, 6, 7, and 8 all received Whisky Advocate scores of 90 points or higher, and various well-regarded writers and online reviewers named batches 1, 3, 4, 5, 6, and 10 amongst the top 10 American whiskeys of 2019 and 2020.Their second release Outer Loop Orbit is no exception. After looking at and smelling casks together with William Hornaday at Kelvin Cooperage, Straub and D'Antoni picked what were originally orange curaçao barrels that a local distiller used to finish a batch of botanical gin. The curaçao's sticky sweetness and gin's sharpness immediately reminded them of the famous tangy drink the astronaut John Glenn drank in the 80s and they thought it would be beautifully complemented with a bourbon. A blend of 5.5YO Kentucky Straight Bourbon and a 12YO High-Rye Kentucky Straight Bourbon was put to rest for a month and the result was mind-blowing. Bottled at 120.3 proof, non-chill filtered and with only 2,402 bottles released, this bourbon has been described as out of this world. It owes its name to the Outer Loop street in Louisville where Kelvin Cooperage is located and to John Glenn who was the first American to orbit the Earth.

Wemyss Heathery Smoke 30 Year Old Single Cask Scotch Whisky
About Wemyss Heathery Smoke 30 Year Old Single Cask Scotch Whisky
"Our family links to the whisky industry date back to 1824," says William Wemyss, the founder and CEO of Wemyss Malts, "when John Haig built his distillery on family land in Fife."Wemyss (pronounced "Weems") is the ancient Gaelic word for caves and stems from the rocky outcrop on which the Wemyss family home — Castle Wemyss — rests. Haig's distillery eventually became known as Cameron Bridge and in 1826, it became the first distillery to produce grain whisky using the column still method invented by Robert Stein.Today, the Wemyss family expertly bottles some of the finest whiskies made across Scotland. "Our whiskies are chosen by a tasting panel," says Wemyss, "and the tasting panel comprises people who work in the business, members of the family, and most importantly, is chaired by Charlie MacLean who helps us select the industry's best whiskies to bottle under our brand."
MacLean, who has been writing about whisky since 1981, was trained in "the sensory evaluation of potable spirits"by the Scotch Whisky Research Institute in 1992. In addition to being a visiting lecturer at the Smithsonian Institution, he is also a Councillor of Clan Maclean and was elected Master of the Quaich (Quaich is derived from the Gaelic word meaning cup), one of the Scotch industry's highest accolades, in October 2009.
Wemyss Heathery Smoke 30 Year Old Single Cask Scotch Whisky was distilled at the Caol Ila Distillery and matured for three decades in a single cask. Nestled in a hidden cove near Port Askaig, Caol Ila Distillery (pronounced "Cull Eela,") was founded in 1846 by Hector Henderson. It borrows its name (which means "The Sound of Islay"in ancient Gaelic) from the sea sweeping past its dramatic and almost hidden location — it is situated between a steep cliff and the eastern shores of the Sound of Islay. For over a century, small coal-fired boats known as puffers navigated the Sound and brought barley, coal and casks to the distillery. Although the puffers no longer exist, Caol Ila continues to distill whisky using locally malted barley, along with pure spring water sourced from Loch Nam Ban (the water travels thr ough limestone and peat before reaching the distillery).
Wemyss Heathery Smoke 30 Year Old Single Cask Scotch Whisky has an aroma of mellow smoke, heathered honey and creamy vanilla. The aroma gives way to notes of burning embers, light citrus and a touch of peppers on the palate, and leads to a finish accented by hints of caramel, chilis and burnt smoke.

Deanston 30 Year Old Single Malt Scotch Whisky
About Deanston 30 Year Old Single Malt Scotch Whisky
Deanston Single Malt Whisky is made using Scottish-grown barley that is grown without the use of pesticides or chemicals. After the barley is mashed and fermented in an 11-ton open-topped mash tun — the only one of its kind in Scotland — it is twice distilled through Deanston's copper pot stills. The stills are equipped with a sloping lyne arm and boiler ball, which helps ensure a lighter and smoother whisky. Following distillation, Deanston 30 Year Old Single Malt is aged for three decades in the cellars of the former cotton mill. The cellars maintain a constant temperature and humidity, causing whisky expert Jim Murray to remark that "Deanston is a cathedral to whisky maturation. In fact, with its gloriously vaulted ceiling, you would swear you were in a crypt." Deanston 30 Year Old Single Malt is initially matured in a combination of used bourbon and sherry casks, giving it soft notes of honey, toffee and vanilla. After a 28-year beauty rest in the bourbon and sherry casks, the whisky in finished in ex-Olorosso sherry casks for two years, which contribute notes of dried fruits, particularly cherries and grapes, to the whisky. Deanston 30 Year Old Single Malt Scotch Whisky is made from the oldest casks maturing at Deanston Distillery. It has a copper gold color, with an aroma of cedar, oak and honey. The initial notes of leather and hints of honey and vanilla fade into notes of cherries, strawberries and grapes, before leading to a dry, honeyed finish. Pick up one of these rare single malts today!About Deanston
In 1785, Sir Richard Arkwright designed and helped construct a cotton mill on the banks of the River Teith. The mill, which was situated just outside Edinburgh, operated for nearly two centuries and employed as many as 1,500 works in the 19th century. In 1965, however, as demand for Scottish cotton fell, the mill was forced to close its doors. The same year, James Finlay, Brodie Hepburn and A.B. Grant (collectively known as the Deanston Distillers) purchased the Deanston Mill and began converting it into a distillery. The mill was ideally suited to produce and age whisky — it was already situated along one of the purest water sources in all of Scotland and the mill's storage cellars, originally designed to store cotton, were perfect for housing maturing casks of whisky. The refurbishment took nearly a year and cost over £300,000, but on October 17, 1966, the Deanston Distillers opened the doors to Deanston Distillery for the first time.About Scotch

About Bruichladdich Octomore 10 Year Old Single Malt Scotch Whisky
Inspired by an entrepreneurial flair and a youthful enthusiasm, the Harvey brothers began construction of the Bruichladdich (pronounced brook-laddie or broo-lah-dee) Distillery in 1881. The brothers were descendants of a dynastic whisky family — their ancestors had already owned distilleries in Scotland for over a century. Today, Bruichladdich Distillery (Bruichladdich means "rocky shore"in ancient Gaelic) remains situated on the shores of Loch Indaal on the island of Islay, and continues to use much of the original equipment installed by the Harvey brothers. The modern Bruichladdich Distillery is known as the most experimental and adventurous of the Scottish distilleries, and the Bruichladdich Octomore Series represents a singularly unique expression in the world of Scotch whisky.
Bruichladdich Octomore 6.1 is the sixth release in Bruichladdich's Octomore series. The whisky takes its name from Octomore Farm, a farm situated high above the village of Port Charlotte just two miles away from Bruichladdich Distillery (the farm provides all of the barley used to create Bruichladdich Octomore). Once barley from Octomore Farm has been harvested, it is malted before being peated to 167 phenol parts per million, making it one of the peatiest whiskies in the world. In contrast, other distilleries on Islay such as Laphroaig and Ardbeg peat barley to approximately 40 or 50 phenol ppm, while Leviathan II Whiskey is peated to 110 phenol ppm.
After the barley has been peated, it is mashed using water drawn from the Bruichladdich loch. The water is soft and devoid of minerality, which makes it ideal for mashing and fermenting the barley. Following fermentation, the wash is twice distilled through Bruichladdich's 130 year-old, 20-foot tall, diamond-shaped stills. The Victorian-era stills produce whisky that is notably floral and elegant. "We have a distillery," says Jim McEwan, the master distiller at Bruichladdich, "and we know how to use it."
Once the whisky has been distilled, it is matured for five years in American oak casks that were previously used to mature bourbon. The whisky has a strong, deep aroma of fire and warm, smoky sweetness. The initial flavors of apples, pears, cinnamon and citrus are complemented by a bold and ever-present undertone of smoke. Thick and textured, the whisky finishes with a warm, smoky flavor that lingers.
"This is no monstrous brute," says McEwan. "It's an iron fist in the velvet glove. That's what you get when you combine massively smokey barley with the purest spirit around. It's like nothing else on earth. It also shows what great quality barley, slow, artisan distill ing, and premium quality wood can achieve."
Much like Bruichladdich Octomore 6.1, Bruichladdich Octomore 10 Year Old Single Malt Scotch Whisky is made from barley harvested on Octomore Farm. Once the barley has been harvested, it is malted and peated to 80.5 phenol parts per million. Then, the barley is fermented and distilled using the same process used to craft Octomore 6.1.
Following distillation, Bruichladdich Octomore 10 is aged for ten years. As a result of using less peat and maturing the whisky longer, Octomore 10 has a stronger aroma of dried fruits, particularly pears and raisins, than Octomore 6.1. In addition, the whisky has subtle undertones of juniper, cinnamon, honey, creamy vanilla and fresh mint that ultimately lead to a lingering finish. "The decade wait has been worth while," says McEwan. "There is pride in the character and honesty of this Islay son."
Bruichladdich Octomore 6.1 was just released, and only 6,000 bottles of Octomore 10 were ever produced. Pick one of each up today!
About Scotch
Scotch is the most popular whisky in the world and is considered the king of them all! There are five whisky regions in Scotland (six if you count the not officially recognized Islands), and each of them produces spirits with unique properties and distinct tasting notes. (The type of grain used determents the type of the scotch.)
Malt whisky is made of malted barley, and grain whisky uses other grains like corn or wheat. Most of the time, a whisky is blended from different distilleries hence the name blended scotch, but if a malt whisky is produced in a single distillery, we get something extraordinary called a single malt.
