About The Macallan No.6 The Masters Decanter Series Single Malt Scotch Whisky
The Macallan No. 6 delivers classic Macallan character, starting with the beautiful dark walnut color, complex aroma, and deep flavors of spice, dried fruit, and orange groves, imparted by first fill sherry seasoned oak casks from Spain. The casks are crafted by master craftsmen from Jerez de la Frontera, the home of sherry. The casks come from a single cooperage to ensure the highest quality for this rich single malt. Bringing together the mastery of The Macallan and the craftsmanship Lalique, this piece of timeless elegance comes in the beautiful Lalique crystal decanter that was designed exclusively for The Macallan.Situated on a ridge above the banks of the River Spey, the Easter Elchies House has been the spiritual home of The Macallan for over three centuries. Then, the barley is fermented with a specially cultured yeast before being distilled twice through The Macallan's copper-pot stills. The copper comprising the stills acts as a catalyst and enhances the formation of sweet esters while minimizing impurities such as sulfur. In addition, the curiously small stills — some of "the smallest stills within the Scotch whisky industry," according to production manager Alexander Tweedie — produce a whisky with a heavy, oily flavor.
Following distillation, The Macallan distillers remove the heads and tails of the whisky and collect approximately 16% of the spirit to fill into casks for maturation. This "cut," which is among the highest of any Scottish distillery, results in a more full-bodied and richer whisky.

The Macallan Oscuro (Spanish for "dark") is a super limited sherried single malt that is as rich and dark as the name implies. Positioned at the very top of the 1824 series, it's made from whisky that has been distilled between 1987 and 1997. It is taken from Oloroso sherry oak casks, many of them first fill, cut to 46.5% with spring water, drawn from deep under the estate, then matured for at least and additional half a year in order for the flavors to finally come together in harmony. About The Malt Whisky Co. Glenglassaugh 40 Year Single Malt Scotch Whisky
Upon this realization, Glenglassaugh’s former master distiller hand-selected his favorite cask from the remaining cache. The whisky resting in the cask was distilled in 1973, and had matured for over forty years in a refill sherry hogshead barrel. After he purchased the cask, the whisky inside was bottled at cask strength.The Malt Whisky Co. Glenglassaugh 40 Year Old Single Malt Scotch Whisky has a rich aroma of berries, brown sugar, apples and pears. Notes of apricots, raspberries, oak, vanilla and toffee dominate the palate, and lead to a smooth, fruity finish.

Eager to satisfy the growing demand for high-quality whisky from customers of his grocery store, James Moir established the Glenglassaugh Distillery in 1875. At the time, it was commonplace for store owners to distill or blend their own whisky (a store owner by the name of Johnnie Walker began blending whisky in the 1830s for his own customers). The location of Glenglassaugh Distillery — it is situated on the outskirts of Banffshire in the Highlands region of Scotland — was chosen because it offered ready access to an incredibly clean and pure water supply: Glassaugh Springs. In addition, the area is surrounded by fields of ripe, plump barley that are ideal for distillation.For over a hundred years, the Glenglassaugh Distillery operated at its original site, producing single malt whiskies that were best known for their starring roles in renowned blended Scotch whiskies, including Cutty Sark and the Famous Grouse. In 1986, however, production at the distillery ceased, and would not be restarted until 2008, when new owners took over Glenglassaugh. While the distillery is again producing new whisky, the new owners discovered they had purchased quite a bit more than the famous distillery itself: th e purchase also included a cache of some 400 casks of aging Glenglassaugh Single Malt whisky, each more than twenty years old.

About The Singleton 19 Year Old 2021 Special Release Single Malt Scotch Whisky
Glendullan is situated in Dufftown, the Whisky capital of the world. As one of the busiest Whisky epicenters, it is home to some of the greatest Scotch Whiskies ever created. Founded in 1898, by William Williams & Sons from Aberdeen, the distillery was actually decreed by King Edward VII in 1902. Like most distilleries, Glendullan has a history of ownership changes and renovations. In 1926, the distillery was bought out by Distillers Company Limited, then switched hands to Scottish Malt Distillers in 1939. By 1962 the distillery was renovated, and only a decade later a new facility was constructed near the original site. In 1985 the original facility was mothballed.“Glendullan 2” is a real workhorse, putting out 4 million liters of spirit per year, producing several labels. The distillery itself has official bottlings and has been producing the Singleton brand since 2007. A bioplant which processes the spent lees was also opened on-site in 2014. The distillery has 3 wash stills with an impressive capacity of 33,700 liters, and 3 spirit stills with 23,800 liters of capacity. They source their unpeated maltings from Diageo's industrial site, and the mashing takes place in a 12-ton mash tun.
Diageo's 2021 Special Releases Collection follows the theme of hidden stories within iconic distilleries, connected via mythical creatures depicted on the bottles. The Singleton 19 Year Old Special Release Single Malt was aged in refill American oak casks before being finished in cognac casks and bottled at 109.2 proof. Situated in the Speyside region of Scotland, the Dufftown Distillery was founded in 1895 by four wine merchants who, together, purchased a stone built saw and meal mill and converted into a distillery. Singleton of Dufftown Single Malt Scotch Whisky is crafted exclusively from malted barley, which is milled and mashed before being fermented in the distillery's wooden washbacks. Following fermentation, the whisky is distilled twice: first through a copper pot wash still and then again through a copper pot spirit still. The Singleton of Dufftown Single Malt Scotch Whisky was distilled in 1985 and matured for 28 years in refill American oak casks. After its nearly three-decade long beauty rest, the whisky was bottled at cask strength without the use of chill filtration.Released as part of Diageo's 2013 Special Releases, Singleton of Dufftown 28 Year Old has an aroma of caramel apples, pine and honey that give way to notes of chewy milk chocolate, dried fruits and marzipan on the palate. The finish is bold and terrific, with a touch of menthol and oak.

Glendullan is situated in Dufftown, the Whisky capital of the world. As one of the busiest Whisky epicenters, it is home to some of the greatest Scotch Whiskies ever created. Founded in 1898, by William Williams & Sons from Aberdeen, the distillery was actually decreed by King Edward VII in 1902. Like most distilleries, Glendullan has a history of ownership changes and renovations. In 1926, the distillery was bought out by Distillers Company Limited, then switched hands to Scottish Malt Distillers in 1939. By 1962 the distillery was renovated, and only a decade later a new facility was constructed near the original site. In 1985 the original facility was mothballed.“Glendullan 2” is also a workhorse, putting out 4 million liters of spirit per year, producing several labels. The distillery itself has official bottlings and has been producing the Singleton brand since 2007. A bioplant, which processes the spent lees, was also opened on-site in 2014. The distillery has 3 wash stills with an impressive capacity of 33,700 liters, and 3 spirit stills with 23,800 liters of capacity. They source their unpeated maltings from Diageo's industrial site, and the mashing takes place in a 12-ton mash tun.
The Singleton Paragon of Time series features their oldest and rarest whiskies. This expression is the oldest release from The Singleton to date, having been crafted more than half a century ago in Dufftown, each process taking its time, the barley malted and turned by hand. The oak butt cask was hand-filled on October 31st, 1966. It was finally matured in a Pedro Ximenez sherry-seasoned cask for an additional sprinkling of richness. Finally, the whisky was bottled at 88.2 proof.

In 1815, Donald and Alexander Johnston began leasing nearly 1,000 acres of land on the island of Islay. Their intent was to raise and sell cattle on the land and as a result, they began growing barley to be used as feed for their livestock. Following a particularly bountiful harvest, the brothers distilled the excess grains they had grown into whisky, and sold it to the inhabitants of the island. Soon thereafter, the brothers found it more profitable to distill whisky than to raise cattle, and Laphroaig (pronounced La-froyg) Distillery was born.For over a century, the distillery would remain in the hands of one of Johnston's descendants. In 1954, however, Ian Hunter passed away childless and bequeathed the distillery to Bessie Williamson, a secretary that had been working at the distillery for two decades. Hunter was incredibly protective of the distillery — while he slowly revealed its secrets to Williamson after she had earned his trust, Hunter prevented a cooper who was employed at the distillery from publishing his memoirs because they described the workings of the distillery in too great a detail.
Laphroaig Single Malt Whisky is one of the most flavorful and intense whiskies made anywhere in the world. During Prohibition, it was one of the few whiskies still legally imported into the United States, as it was considered a medicinal spirit. Laphroaig Single Malt is made from the finest Scottish barley, which is malted at the distillery and smoked over a peat flame. Unlike other distilleries which source peat from the Scottish mainland, the peat used to smoke Laphroaig barley is made from the heather, mosses, and lichens of Islay and adds a distinct iodine-like flavor to the whisky.
After the barley has been malted and peated, it is fermented before being twice-distilled through Laphroaig's copper-pot stills. The unique stills have an unusually flat base and flat surfaces, which lends to the overall intensity of the whisky. After the whisky has been distilled, it is aged in seasoned oak barrels, which are re-charred prior to being filled. The re-charring process caramelizes the remaining sugars in the barrel, and adds slightly sweet notes of vanilla and nutty dough t o the whisky.
Laphroaig 16 gets released on special occasions, starting with their 200th anniversary in 2015. The 2021 edition spent its 16 years in 1st-fill ex-bourbon casks before being bottled at 96 proof. The barrels impart the spirit with a striking bright-gold hue as well as vanilla and spice notes that blend perfectly with Laphroaig's signature peaty, maritime taste profile.

About Kentucky Owl
Kentucky Owl was founded by Charles Mortimer Dedman, a local pharmacist, in 1879. After marrying his wife, Dedman was given a large parcel of land on the banks of the Kentucky River, as a wedding gift from his adopted father who was a local town judge. C.M. Dedman Distillery was established here on the banks of the Kentucky River, producing "The Wise Man's Bourbon" under Distilled Spirits Plant Designation "No. 16", one of Kentucky’s original distilleries and part of a booming industry.Kentucky Owl achieved much success and production continued until Prohibition halted distillation. The family-run facility was no match for the "forces of teetotalism, temperance and eventually, the Feds". In 1916, Prohibition left several local distilleries with ample reserves of bourbon. As for Kentucky Owl, approximately 250,000 gallons of bourbon were left over in various stages of aging. Today these reserves would be worth about $40 million in inventory. After Federal agents descended on the Dedman’s distillery, the bourbon was seized and shipped up the river by barge to the state capital in Frankfort for "safekeeping" in a warehouse.
Currently, Kentucky Owl is in the midst of designing a stunning state-of-the-art distillery park with rickhouses for aging, a bottling center, as well as a vintage dinner train to stop on th e property. It will be built at Cedar Creek Quarry in Bardstown. The 420-acre site will boast beautiful lakes with crystal clear, limestone-filtered water that will be used in their whiskey production.
About Rye
As American as the bald eagle, rye whiskey was first brewed in the American Northeast in the 1600s. Even George Washington distilled it after leaving the Oval Office, so there’s no way of denying its origin.
It’s distinguished from bourbon for its original and unique spicy notes.
By law, rye whiskey must be made from at least 51% rye grain, aged in new and charred oak barrels for at least two years, and bottled at no more than 62,5% ABV.
